Position Summary:

Responsible for all operations at a central kitchen with food production and service to multiple centers, meeting Child and Adult Care Food Program (CACFP) and CYFS standards. Supports CAPSLO’s mission by ensuring that the food service operation runs smoothly and helps individuals and families in the community.

 

Level I:Prepares meals for 3 or more centers with a total of 149 or less children.

 

Level II:Prepares meals for 3 or more centers with a total of 150 or more children.

 

Required Education and Experience:

  1. Two years of experience as a cook or comparable experience in food preparation and quantity cooking for large groups (150). Must be able to prepare meals using whole food ingredients (cooking from ‘scratch’).
  2. One year experience supervising others and managing a large commercial food service operation.
  3. Experience and knowledge in food preparation techniques for children (ages 1-6 years old).
  4. Experience purchasing large quantities of food.

 

Preferred Education and Experience:

Experience working in preschool or school food service is preferred. Bilingual, English and Spanish preferred.

 

License & Certifications:

  1. Must hold and maintain current Food Safety and Sanitation Certificate.
  2. Must provide a certificate of completion of an approved first aid class to be evidenced within 90 days of hire.
  3. Must have a valid California Driver’s License.

Essential Functions:

  1. Supervises the work of food production staff (Food Service Worker I, Food Service Worker II, Cook I, Cook II) and food delivery to satellite centers.
  2. Develops schedules for staff hours and food production.
  3. Monitors all food supplies and other food service supplies on an ongoing basis.
  4. Orders food delivery and arranges for direct purchase of food, ensuring adequate meal servings for program participants while following budgetary limits and avoiding waste.
  5. Ensures maintenance of the kitchen facility and equipment, including proper sanitation, storage and organization.
  6. Ensures maintenance and cleanliness of delivery vehicles.
  7. Ensures the safety of staff and equipment in the kitchen and during deliveries.
  8. Ensures that all staff follows safe food handling practices.
  9. Prepares and reviews required CACFP records and other documentation.
  10. Monitors quality and quantity of all food served by the central kitchen.
  11. Trains new food service employees and volunteers.
  12. Facilitates monthly central kitchen staff meetings.
  13. Conducts performance evaluation of central kitchen staff.
  14. Visits, at a minimum, one center each month and performs a kitchen sanitation checklist.
